air fryer Healthy French Toast Roll-Ups

Healthy French Toast Roll-Ups (CS358-AF) 

These roll-ups have all the delicious flavors of French toast minus the heaviness of butter and oil. Stuffed with creamy almond butter, bananas, and blueberries and infused with warming cinnamon and vanilla, the air fryer bakes these roll-ups to crispy perfection. Taking just 5 minutes to prepare, even kids can help in the kitchen to make this special for Mom. Try customizing these roll-ups with her favorite fruit and spreads for a delicious breakfast to start her day.  

Yield: 8 servings 

Prep time: 5 minutes 

Cook time: 6 minutes 

Ingredients: 

  • 8 slices soft sandwich bread, crusts removed 
  • 2 eggs 
  • 3 tablespoons milk (dairy or nondairy) 
  • ½ teaspoon vanilla extract 
  • ¼ teaspoon cinnamon 
  • Pinch of salt 
  • 4 tablespoons creamy almond butter 
  • ½ banana, thinly sliced 
  • ¼ cup blueberries 
  • Coconut oil spray 
  • Powdered sugar, for dusting 

    Items Needed:

    • Rolling pin

    Directions: 

    1. Roll each slice of bread using a rolling pin to flatten and make more pliable.  
    2. Whisk together the eggs, milk, vanilla, cinnamon, and salt in a medium bowl until completely combined. Set aside.  
    3. Spread almond butter evenly over one side of each slice of bread. Place one row of bananas and blueberries on each slice, making sure not to overfill so that it can be rolled up easily.  
    4. Roll the bread into a tight log, starting with the side that has the fruit, so that the fruit is wrapped in the bread.  
    5. Select the Preheat function on the Cosori Air Fryer, adjust temperature to 360°F, then press Start/Pause
    6. Dip each roll-up in the egg mixture and turn to coat all sides. Place roll-ups into the preheated air fryer baskets. 
    7. Set temperature to 360°F and time to 6 minutes, then press Start/Pause
    8. Remove roll-ups when golden brown and transfer to a serving plate.  
    9. Dust with powdered sugar and serve.

    Cobb Salad with Chicken & Honey Mustard Dressing (CS100-AO) 

    Enjoy all the flavors of a classic Cobb salad without all the grease! From the chicken and bacon down to the hard boiled eggs, all of it can be made right in your air fryer toaster oven with a fraction of the oil. Served with a delicious homemade honey mustard dressing, this is a salad Mom will want you to make for her every day of the week.  

    Yield: 4 servings  

    Prep time: 30 minutes 

    Cook time: 36 minutes 

    Salad Ingredients: 

    • 4 large eggs 
    • 6 slices bacon 
    • 4 boneless & skinless chicken breasts, thinly cut 
    • Spray oil or cooking spray 
    • Kosher salt & freshly ground black pepper, as needed 
    • 2 hearts of romaine, chopped 
    • 2 cups cherry tomatoes, halved 
    • 1 large avocado, diced 
    • 1 cup bleu cheese crumbles 
    • ½ red onion, sliced very thin 
    • ¼ cup chives, finely chopped 

      Dressing Ingredients:

      • ¼ cup Dijon mustard 
      • 4 tablespoons honey 
      • ¼ cup apple cider vinegar 
      • ⅓ cup olive oil 
      • ½ lemon, juiced 
      • Kosher salt & freshly ground black pepper, as needed 

        Directions: 

        1. Select the Preheat function on the Cosori Air Fryer Toaster Oven, adjust temperature to 300°F, then press Start/Pause. 
        2. Place the eggs in the fry basket and insert at top position in the preheated oven. 
        3. Select the Air Fry function, set temperature to 300°F and time to 14 minutes, then press Start/Pause. 
        4. Remove the eggs from the oven and place in a large bowl of ice water. Let them sit in the water for 10 minutes, then carefully peel and roughly chop them. Set aside. 
        5. Place the bacon in the fry basket and insert at top position in the oven, with the food tray in the position underneath to catch any fat drippings. 
        6. Select the Air Fry function, set time to 7 minutespress Shake, then press Start/Pause. 
        7. Flip the bacon over halfway through cooking. The Shake Reminder will let you know when.  
        8. Remove the bacon from the oven, let cool slightly, then roughly chop and set aside. 
        9. Spray the chicken breasts with cooking spray or oil, season to taste with salt and pepper, then place into the fry basket. 
        10. Select the Preheat function, adjust temperature to 370°Fand press Start/Pause. 
        11. Insert the fry basket at top position in the preheated toaster oven, with the food tray placed in the position underneath to catch any fat drippings.  
        12. Select the Air Fry function, adjust temperature to 370°F and time to 15 minutes, then press Start/Pause 
        13. Remove the chicken when finished, let rest for 10 minutes, then dice. 
        14. Whisk together the dressing ingredients until combined, then season with salt and pepper to taste. 
        15. Toss the romaine lettuce with 3 tablespoons of the dressing. Divide between 4 bowls or plates. 
        16. Top the lettuce with lines of the bacon, tomatoes, egg, chicken, avocado, onion, and bleu cheese. Sprinkle chives over each salad and drizzle with a bit more dressing. Serve immediately. 

         

        steak with arugula tagliata dish

        Steak and Arugula Tagliata (CS100-AO) 

        tagliataor an Italian chopped steak, is a simple yet delicious dish to make for Mom. Served over a peppery bed of arugula dressed with balsamic vinegar, olive oil, and shaved Parmesan, it has all the fixings for a fancy dinner right at home. Cooking it in the air fryer toaster oven makes it faster, meaning less time standing over a hot grill or stove, making it a win-win. 

        Yield: 2 servings 

        Prep time: 35 minutes 

        Cook time: 8-12 minutes 

        Ingredients: 

        • 2 New York strip steaks 
        • Kosher salt & freshly ground black pepper, as needed 
        • 4 cups arugula 
        • ⅓ cup shaved Parmesan cheese 
        • Olive oil, as needed 
        • Balsamic vinegar, as needed 
        • Flaky sea salt, for serving 

          Directions: 

          1. Let the steaks sit at room temperature for 30 minutes prior to cooking. 
          2. Select the Preheat function on the Cosori Air Fryer Toaster Oven, adjust temperature to 400°F, and press Start/Pause. 
          3. Season the steaks generously with kosher salt and pepper. 
          4. Place the steaks onto the fry basket and insert at mid-position into the preheated oven. 
          5. Select the Roast functionset temperature to 400°F and time between 8-12 minutes (for medium done, depending on the thickness of the steak), press Shakethen press Start/Pause.  
          6. Flip the steaks halfway through cooking. The Shake Reminder will let you know when. 
          7. Place a bed of arugula onto each serving plate, then drizzle with olive oil and balsamic vinegar. Scatter the shaved parmesan on top of the arugula. 
          8. Remove the steaks and let rest for 5 to 10 minutes. 
          9. Slice the steaks against the grain into thin strips. Lay the sliced steaks on top of each bed of arugula. Top with flaky sea salt and freshly ground black pepper, then serve. 

           

          lychee rose cake

          Lychee Rose Cake (CS100-AO) 

          Inspired by the famous Ispahan macarons from French pastry chef Pierre Herme, this Lychee Rose Cake combines fragrant rose with sweet lychee for a unique yet beautiful dessert. With hands-on prep taking jus3040 minutes for a full 9-inch cake, the whole family can lend a hand for a quick treat that Mom will remember.  

          Yields: One 9-inch cake 

          Prep time: 45 minutes 

          Cook time: 40 minutes 

          Cake Ingredients: 

          • One 20-ounce can of lychees in syrup 
          • 1 cup plus 1 tablespoon unsalted butter, room temperature 
          • ¾ cup caster sugar or superfine sugar 
          • 3 large eggs 
          • ½ teaspoon rosewater 
          • ½ teaspoon almond extract 
          • 1 teaspoon vanilla extract 
          • 2 cups cake flour 
          • ½ teaspoon kosher salt 
          • 2 teaspoons baking powder 

            Glaze Ingredients:

            • 3 sticks unsalted butter, room temperature 
            • 4 cups powdered sugar, sifted 
            • ¼ cup reserved lychee syrup 
            • ¼ teaspoon rosewater 
            • 1 teaspoon vanilla bean paste 
            • 1-2 drops pink food coloring gel, if desired 
            • Sprinkles, if desired  

              Items Needed:

              • 9-inch-round cake pan 
              • Cooking spray 
              • Parchment paper 
              • Stand mixer or hand mixer 

                Directions: 

                1. Spray the inside of a 9-inch-round cake pan with cooking spray. Cut a piece of parchment paper to fit the bottom of the pan, then press the parchment into the pan. It should stick to the cooking spray and lay flat at the bottom of the pan. 
                2. Select the Preheat function on the Cosori Air Fryer Toaster Oven, adjust temperature to 350°F, and press Start/Pause. 
                3. Strain the canned lychees over a bowl, reserving 3 fluid ounces (6 tablespoons) of the syrup for the cake and ¼ cup for the buttercream. Cut the lychees into quarters and pat very dry with paper towels. Set aside. 
                4. Beat together the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment until very fluffy. 
                5. Add the eggs, one a time, beating well and scraping down the sides of the bowl with a rubber spatula after each addition 
                6. Beat in the rosewater, almond extract, and vanilla extract. 
                7. Sift the cake flour, salt, and baking powder together into a medium bowl. 
                8. Add the flour mixture into the stand mixer one third at a time on low speed, alternating with a third of the lychee syrup (2 tablespoons at a time), being careful not to overmix the batter. When the batter is smooth, fold in half of the quartered lychees with a rubber spatula. 
                9. Fill the prepared cake pan with the batter. Tap the pan on the counter to even out the batter and pop any air bubbles.  
                10. Insert the loaf pan onto the rack, then insert the rack at low position in the preheated oven.  
                11. Select the Bake functionadjust temperature to 350°F and time to 40 minutes, then press Start/Pause.  
                12. Insert a toothpick or cake tester into the cake when the timer goes off. If it comes out clean, the cake is done. If not, continue baking for 5 minutes at a time until the cake is fully baked. 
                13. Remove the cake from the oven and let cool completely on a wire rack before carefully removing the cake from the pan. 
                14. Beat the 3 sticks of unsalted butter, powdered sugar, rosewater, vanilla bean paste, and ¼ cup lychee syrup together in a stand mixer fitted with a paddle attachment to make the buttercream. Start on low speed and gradually speed up as the sugar is incorporated. Add pink food coloring gel, if desired. 
                15. Ice the cooled cake with buttercream and decorate with remaining lychees or sprinkles.
