Step 1
Tear 2-inch-wide clusters from the mushrooms. Set aside.

Combine the all-purpose flour, cornstarch, celery salt, kosher salt, Italian seasoning, mustard powder, garlic powder, ground ginger, and ground black pepper in a medium bowl.

Whisk the dry ingredients until well mixed, then slowly whisk in the cold club soda.

Add the panko breadcrumbs into another bowl.

Coat the mushrooms in the batter, letting the excess drip off, and immediately toss into the panko breadcrumbs.

Press the breadcrumbs into the mushrooms to make sure every crevice is coated.

Place the crisper plate into the COSORI Smart Air Fryer basket.

Spray the basket with oil spray, then place the mushrooms onto the crisper plate.

Spray the mushrooms generously with oil spray.

Select the Air Fry function, adjust temperature to 400°F and time to 10 minutes, then press Start/Pause.

Whisk together all the ingredients for the scallion aioli in a bowl and set aside.

Remove the mushrooms when done.

Assemble the sandwiches by spreading both sides of the brioche buns with the aioli, place the arugula on the bottom of each bun, add the mushrooms, and top with the top bun, then serve.

- 12 ounces oyster mushrooms
- ¾ cup all-purpose flour
- ¼ cup cornstarch
- 1½ teaspoons celery salt

- 4 brioche buns, halved, toasted
- 3 cups arugula
- Scallion Aioli
- 1 cup mayonnaise
- 2 scallions, thinly sliced
- 1 garlic clove, grated
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- A pinch of white pepper
- ¼ teaspoon kosher salt
